For our dishes we use organic vegetables and first choice meats. Many preparations are homemade, including bread made with selected flours or fresh pasta with organic eggs, kneaded by hand and rolled out with a rolling pin.

Our Pasta

Pasta in Italy is at the base of our culinary tradition and it remains a fundamental also in Sabatini’s kitchen where it is created with fine flours and selected organic eggs.

Pappardelle, tagliatelle and stuffed pasta have the flavor and texture of pasta prepared by our grandmothers.

The great Italian meats including Chianina or Marchigiana, are also offered with a skilful natural charcoal cooking, while cheeses, herbs and sprouts come from biodynamic farms and represent Sabatini’s new idea of experiential cuisine where nothing has already been seen , and nothing is left to chance.
